Chinese Dumplings with a Spicy Red Chili Broth

When the ID is shut down, food delivery service charges somehow add an additional $573 to your total, and you’ve got nothing but time? Make these. The fun thing about dumplings is that you can make them your own. Don’t have all the ingredients? That’s fine! Also – a little secret, wonton wrappers are literally just flour and water…chances are you probably make these with what you’ve already got at home.



I can't get enough of dumplings. I could eat them every day and not get sick of them. Plus it's such a fun project and it's one of the rare times I can get my boyfriend involved in the kitchen ha!


There is a classic ingredient list for dumplings, but you can also get creative as well. For me, the green onions, the garlic, and the shrimp/pork combo is where I start (with a lottt of fresh ginger). But get creative! You can make vegan dumplings as well with tofu, carrots, cabbage or whatever you can find in the fridge.


The process may not be the quickest thing in the word, but it's definitely worth it. So pour a glass of wine and enjoy the process! All good things take time, right?



Ingredients:

Dumplings:

• 8 oz shrimp, chopped

• 8 oz ground pork

• 1 tablespoon soy sauce

• 1 tablespoon sherry wine

• ½ tablespoon sesame oil

• 1 tablespoon freshly grated ginger

• 2 garlic cloves, chopped

• 1 teaspoon sugar

• 1 teaspoon Chinese 5 spice powder (optional)

• ¼ teaspoon salt

• 1/8 teaspoon white pepper (black is fine as well)

• 2 chopped green onions

• Wonton wrappers (homemade are easier to wrap but I’ll get into that later)

Spicy chili broth:

• 1 tablespoon soy sauce

• 1 tablespoon chili oil

• 1 teaspoon sugar

• 1 tablespoon black vinegar (can sub 1 part rice wine, 1 part balsamic, 3 parts water)

• 1 teaspoon sesame oil

• 1 cup hot chicken broth

• 1 green onion, chopped

Method:

Mix all dumpling ingredients together until smooth and sticky. Start making the dumplings.

Make sure to keep the wrappers under a damp cloth so they don’t dry out, this is very important or the dumplings will break in the wrapping process. Once they are ready, boil a large pot of water. Add the dumplings. Once the water is boiling again, add about a cup of cold water to slow the cooking process down. Repeat this 3 times. This will ensure the middle of the dumpling is cooked and the wrapper does not disintegrate. Remove dumplings and place them directly in a bowl.

Combine all of the broth ingredients. Pour broth over dumplings and garnish with green onion!
